It’s that time of year when the days are getting longer, air is getting warmer and the fruity cocktails are flowing. And I’m here to add another drink to your rotation that is so delish it may last past the summer months. With the warmer weather I tend to go for drinks that are not only tasty but are also refreshing. Champagne always fits the bill and turns any average evening into a celebration. This drink takes your glass of bubbly up a notch by adding a boozy peach ice pop. With just three ingredients these peach pops are so easy to make. Warning, these boozy peach ice pop are so delicious your going to need to make room in your freezer and stock up for the summer!
Ingredients
- 3 peaches, cored and chopped
- 1/2 cup white grape juice
- 4.5 ounces (3 shots) peach schnapps
- 1 extra peach and a handful of strawberries for garnish
- You’ll also need a blender, ice pop mold and popsicle sticks
Toss the chopped peaches, white grape juice and schnapps into the blender and pulse. You can blend as much or as little as you want, it will depend on how smooth you want your ice pops to be. Once blended pour into your ice pop molds – I used this one, here, which makes ten ice pops. Freeze for about 15-20 minutes, or until the pops are slushy. Remove from freezer and insert peach and strawberry slices along with the popsicle sticks into the center of each pop. Freeze for a few hours.
These boozy peach ice pops are great on their own, but for the perfect summer treat dunk them in your favorite bubbly. I found the peach flavors paired perfectly with a crisp prosecco. This cocktail just oozes celebration and I can envision them being served at an outdoor wedding or at home brunch (or a random week night).
